Breakfast burrito muffins, code name Burriffins.

It’s Saturday and I’m rolling out of bed way to late to even think about brunch.

I turned to my fridge and decided to get creative. Behold,

BREAKFAST BURRITO MUFFINS.

3 eggs

1 burrito size tortilla (sub for corn if you want this to be vegan)

1/2 cup of cheese

1/2 cup roasted potatoes

1/4 cup roasted onions

1/2 cup black beans

1/2 cup ground beef, pork or chicken. (Whatever you want the sausage to be made from! Have fun.)

combine all of the seasons in with the meat. Mix until fully blended, then roll into marble sized balls. make sure you grease your pan if you’re not using nonstick. if you haven’t already roasted your potatoes and onions, throw them into a pan on medium with a little butter or oil, salt, black pepper and garlic. Cook for about 20 minutes. preheat oven to 350. fill tortillas about 3/4 of the way full.

I may never go out to brunch again.
